Cream Cheese Cocoa Nib Cookies {Slice & Bake}

2 cups (4 sticks) unsalted butter, softened
6 ounces room temperature cream cheese
1 1/4 cups sugar
2 tablespoons plus 1/2 teaspoon pure vanilla extract
1 1/2 cups mini semisweet chocolate chips
1/2 cup to 1 cup of cocoa nibs
